Corned Beef and Cabbage healthy??

On New Year's Day, it's traditional in many families to eat corned beef and cabbage for good luck in the coming year. Whether or not you believe that, you can believe that this dinner provides a tasty, healthy meal.

First, the beef itself: After trimming off side fat, a corned beef brisket has about the same fat content as round steak. A 3-ounce serving has 153 calories and 4 grams of fat. It provides much more. The 3 ounces contain about a third of the riboflavin, potassium, and iron your body requires each day. It has a quarter of the niacin and vitamin B6 you need, and about 12 percent of the recommended amounts of vitamin B12 and zinc.

Iron deficiency is the most common nutritional deficiency in the U.S. That could be why so many people see their doctors about fatigue. And people who exercise need more iron than those who don't. Zinc and vitamin B6 are important for a healthy immune system. If you don't get enough vitamin B12, you could experience memory problems and fatigue. Niacin is vital for skin, nerves, and digestion. Thiamin helps to convert blood sugar into energy, according to the Doctor's Book of Food Remedies (Rodale).

Want a corned beef and cabbage dinner? Here's how to make it: Buy a brisket that provides one pound for each adult. Trim fat and rinse, add a large onion, and the envelope of spices if one came with the brisket. Boil for an hour. Drain, re-cover with water, and cook 1 1/2 to 2 hours. Add potatoes, cabbage, and carrots and cook for an additional half hour. That's it! Some people like their corned beef to be very tender. They could cook it overnight in a crockpot, or cook it for 20 minutes in a pressure cooker before adding the vegetables. Corned beef and cabbage is also a traditional St. Patrick's Day meal.
